Broccoli Almond Soup
A creamy yet wholesome soup made without cream, rich in Vitamin C, fibre, and Vitamin E from almonds. Great for immunity, hormone balance, and keeping you full for longer.
Servings: 4 bowls
Ingredients:
- 5 cups broccoli florets
- 1 medium Onion sliced
- 2-3 cloves garlic minced
- 20 piece raw almonds
- 1 tbsp oil
- 3 cups Water
- Salt and Black Pepper as per taste
- 1 tsp Oregano
- 1 tsp Chilli Flakes
- 1 tsp Fried Garlic
Instructions:
- Soak almonds in warm water to remove their skin before using.
- In a saucepan or pressure cooker, add oil, chilli flakes, garlic, onions and saute for 3-4 minutes.
- Add broccoli and let it cook for 5-8 min after covering with a lid
- Once the broccoli is tender, add peeled almonds
- Remove from heat. Let it cool. Blitz with a blender.
- If it's too thick you can thin it down by adding some more water.
- Do not strain or add any corn starch
- Garnish with fried garlic & enjoy!
