Desi Harvest Bowl
A balanced and fulfilling bowl with whole grains, lean protein, chickpeas, and fresh veggies. Packed with fibre, complex carbs, and healthy fats, it supports gut health and provides steady energy through the day.

Ingredients:
- Base:
- 1 cup boiled barley
- Protein:
- 100g paneer / tofu / chicken (grilled or pan-seared)
- Legumes:
- ½ cup boiled chickpeas (sautéed with cumin, turmeric, chili powder, salt)
- Veggies:
- ½ cup cucumber (diced), ½ cup bell peppers (sautéed or raw), ½ cup carrots (julienned), ½ cup lettuce/spinach
- Dressing:
- 1 tbsp extra virgin olive oil, 1 tbsp lemon juice, 1 tsp honey, 1 tbsp mint coriander chutney, 2 tsp minced garlic, salt & pepper
Instructions:
- Cook barley until fluffy, season lightly with salt.
- Prepare protein: Grill or pan-sear paneer/tofu/chicken with a pinch of salt & pepper.
- Masala chickpeas: Toss boiled chickpeas with spices & sauté for 2–3 mins.
- Assemble bowl: Layer barley → veggies → chickpeas → protein.
- Dressing: Whisk olive oil, lemon juice, honey, mint coriander chutney, minced garlic, salt, pepper. Drizzle over bowl.
- Garnish with coriander or microgreens. Serve fresh!
